  • Prepare the zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or paper towels and press out the excess moisture. This step helps the bites crisp up beautifully in the oven.
  • Combine the ingredients: In a large bowl, mix the grated zucchini with minced garlic, breadcrumbs, Parmesan cheese, egg, salt, and black pepper. Stir until everything is evenly distributed. Feel free to add red pepper flakes or fresh herbs for an extra flavor boost.
  • Form the bites: Take about one tablespoon of the mixture and form it into a small ball or patty. Arrange the zucchini bites on a baking sheet lined with parchment paper.
