Ingredients
  

  • 2 cans (15 ounces each) Chickpeas
  • 1 can (13.5 ounces) Coconut Milk
  • 1 can (14.5 ounces) Diced Tomatoes
  • 1 medium Onion, Diced
  • 4 cloves Garlic
  • 1 cup Vegetable Broth
  • 1 tablespoon Dried Italian Herbs
  • ½ teaspoon Red Pepper Flakes
  • ¼ cup Fresh Basil or Parsley
  • Salt and Pepper

Optional:

  • 2 cups Spinach or Kale
  • 1 cup Carrots or Bell Peppers
  • 2 tablespoons Nutritional Yeast

Instructions
 

  • Heat the Oil: In a large pot or skillet, add a splash of oil and warm it over medium heat. This will create a base for your aromatics.
  • Cook the Onion: Add the diced onion to the pot and sauté for about 4 minutes, stirring occasionally. You want it to soften and turn slightly golden.
  • Add the Garlic: Once the onion is ready, stir in the minced garlic. Cook for an additional 1-2 minutes until it becomes fragrant. Be careful not to let it burn.
  • Combine with Tomatoes: Pour in the can of diced tomatoes, including all the juices. Mix well and let it simmer for about 5 minutes. This will help concentrate the flavors.
  • Incorporate Chickpeas: Gently fold in the rinsed chickpeas, ensuring they’re well coated with the tomato mixture. This is where the dish starts to come together.
  • Add Coconut Milk and Broth: Slowly stir in the coconut milk and vegetable broth, mixing everything until combined. Bring the mixture to a gentle simmer.
  • Finish with Fresh Herbs: Just before you’re ready to serve, fold in the chopped fresh basil or parsley for a burst of freshness.
