Ingredients

For the Chicken:

  • 1 tablespoon olive oil

For the Marinade & BBQ Sauce:

  • ½ cup pineapple juice
  • cup soy sauce
  • ¼ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper

For Garnish:

  • Grilled pineapple slices
  • Chopped green onions
  • Sesame seeds

Instructions

Marinate the Chicken:

  • Prepare the Marinade: In a bowl, combine pineapple juice, soy sauce, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, minced garlic, grated ginger, smoked paprika, and black pepper.
  • Marinate the Chicken: Place the chicken in a resealable bag or dish, pour the marinade over it, and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.

Preheat Your Grill or Pan:

  • Grilling Option: Heat your grill to medium-high (about 375°F to 450°F).
  • Stovetop Option: Warm a large skillet over medium heat and add a little olive oil.

Cook the Chicken:

  • Grilling Method: Take the chicken out of the marinade and discard it. Grill for approximately 6-7 minutes per side, until the internal temperature reaches 165°F.
  • Stovetop Method: In the skillet, cook the chicken for about 6-7 minutes on each side until it's browned and cooked through.

Add Extra Flavor:

  • For a delicious glaze, brush some BBQ sauce on the chicken during the last few minutes of cooking.

Rest and Serve:

  • After cooking, let the chicken rest for about 5 minutes before slicing. Serve with grilled pineapple, chopped green onions, and sesame seeds for added flavor and presentation.
