  • 2-3 pounds Beef chuck roast or stew beef
  • 2 cups Beef broth
  • 4-5 cloves Garlic
  • 1 Yellow onion
  • 2-3 Carrots
  • 2-3 Potatoes optional
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • Salt and pepper

  • 1 cup Mushrooms sliced
  • 1 tablespoon Tomato paste

  • Prepare the beef: Start by cutting your beef into large chunks, if necessary. This helps the meat cook evenly and absorb all the delicious flavors. Season the beef generously with salt, pepper, and any herbs you love. I recommend thyme or rosemary for a comforting, savory touch.
  • Sear the beef (optional): For extra flavor, you can quickly sear the beef in a hot skillet with a little oil before adding it to the crockpot. This step adds a rich, caramelized layer to the meat. But if you're short on time, feel free to skip this part, the crockpot will still do its magic.
  • Add everything to the crockpot: Once the beef is prepped, place it in the crockpot along with your chopped onions, garlic, and any optional vegetables you’d like to include. Pour in the beef broth to create a savory base for the dish.
  • Set the crockpot: Cover and set your crockpot on low for 6-8 hours, or on high for about 4 hours. The longer it cooks, the more tender and flavorful the beef will become. While it’s cooking, you can relax, knowing the crockpot is doing all the hard work for you.
  • Check the beef: After the cooking time, check the beef for tenderness. It should easily shred with a fork. If you prefer a thicker sauce, you can remove the beef and let the broth cook down for a few more minutes with the lid off.
