Ingredients
  

For the Cod

  • 4 cod fillets (about 6 oz each)
  • Salt and black pepper
  • 1 tablespoon olive oil

For the Coating

  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1 tablespoon lemon zest
  • 1 large egg

  • Prep the Cod: Start by patting your cod fillets dry with a paper towel. This step helps the coating stick and ensures your fish doesn’t become soggy. Season both sides of the fillets with salt and black pepper to taste, giving the fish a bit of flavor before it gets coated.
  • Prepare the Coating: In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, paprika, onion powder, and lemon zest. Mix everything together so the seasonings are evenly distributed.
  • Coat the Fish: Next, dip each cod fillet into the beaten egg, ensuring it’s fully coated. This step helps the breadcrumb mixture stick to the fish. Then, roll the fillet in the breadcrumb mixture, pressing gently to make sure the coating sticks well. Repeat with all the fillets.
  • Bake the Cod: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup, and lightly brush it with olive oil or spray with cooking spray. Arrange the coated cod fillets on the baking sheet. Bake for 12–15 minutes, or until the fish is golden and crispy on the outside and cooked through on the inside. The internal temperature of the fish should reach 145°F (63°C) when done.
  • Serve and Enjoy: Once your crispy baked cod is perfectly cooked, remove it from the oven. If you’d like, garnish with fresh parsley and serve with lemon wedges for an extra burst of freshness. Pair it with your favorite side dishes like roasted veggies or a simple salad for a complete meal.
