Prepare Your Fruit: If you’re using fresh berries, wash them thoroughly. For frozen berries, there’s no need to thaw them, just toss them right into your pot. Add them to a large saucepan along with the orange juice and lemon juice. Stir to combine.
Cook the Fruit Mixture: Heat the mixture over medium heat. Stir occasionally, mashing the fruit with a spoon as it softens, until the berries begin to break down (about 10 minutes). You want a chunky consistency at this point, but don’t worry if some liquid starts to form it’ll come together.
Add the Sugar and Spices: Once the fruit mixture is simmering, stir in the granulated sugar, cinnamon, and cloves. The sugar will help thicken the jam as it cooks. Stir everything until the sugar dissolves completely, and bring the mixture to a gentle boil.
Stir in the Pectin: In a small bowl, mix the pectin with the water until fully dissolved. Add this pectin mixture to your jam, stirring constantly. You’ll notice the jam begin to thicken almost immediately. Continue to cook for another 5-10 minutes, stirring occasionally.
Test the Jam’s Consistency: To make sure your jam is the right thickness, do a simple test: place a small spoonful of the jam on a chilled plate, then tilt the plate. If the jam runs, it needs a little more time to cook. If it stays in place, it’s ready to go.
Jar It Up: Once the jam reaches your desired consistency, remove it from the heat. Let it cool slightly, then ladle it into sterilized jars while it’s still warm. Seal tightly, and let it cool completely before storing.
